I am not as much of a fan of the Disney Princes myself, the earlier princes seeming to be little more than a plot device, so when trying to think of my favourite Prince, I didn't really struggle. The choice was obvious to me.
Flynn Rider is my favourite Disney prince. He starts off as a thief, and does not really care about anything that he won't benefit from, but he is completely redeemed after he meets Rapunzel. Yes, technically he is not a prince, but he and Rapunzel do eventually get married in the Tangled ever After Short so I am including him!
Throughout the movie Tangled, you get to see him grow as a person, and slowly he begins to do things that will benefit other people, eventually *spoilers* sacrificing his life for Rapunzel to free her from Gothel. Out of all the Disney Princes, he is the one that goes under the most amount of growth and has the most character development, and I also just find that he is the most interesting out of all the Disney princes, which is why I am listing him as my favourite!
